Why hand-stitch instead of using a sewing machine with polyester thread? For the same reason that real bespoke tailors and haute couturiers sew by hand: to use varying thread tensions depending on the functional area and shaping requirements of the product.
A sewing machine is not very good at making discretionary and expert judgements. It is why a factory assembled garment always looks lifeless.
Once one sees it, it is impossible to un-see it.
